I’m using IGBT to control PMSM, for example, if the normal voltage of PMSM is 600V, and the current is 300A, How do I choose the IGBT category according to current and voltage?

You choose an IGBT with abs maximum voltage of about 20 advanced than the expected collector-emitter voltage at the worst condition (you count your topology, switching voltage spikes, inputover-voltage). You choose the IGBT current rate according to Tj and power dispersion. Abs maximum current drops at advanced temperatures. So choose proper cooling, it might be you need to parallel devices to achieve advanced current. You also have to consider peak current so that it would survive.
Keep in mind there are numerous other parameters you have to consider, for example, dynamic characteristics, ability to operate at short circuits (10us specified generally), and so on.
